Danish Æblekage

Cultural Context

Æblekage, or Danish apple cake, has roots in rural Denmark where apples were abundant. Traditionally served during the fall harvest, this dessert celebrates the sweet, tart flavor of apples, often layered with breadcrumbs and cream. It's a beloved dish in Danish homes, especially during gatherings and festive occasions, showcasing the simplicity and comfort of Danish cuisine. Today, variations exist, with some adding nuts or spices, but the essence remains the same: a warm, inviting dessert that evokes nostalgia and community.

1

Peel and core the 800 g Boskoop apples, then cut them into bite-sized pieces.

2

Place the apple pieces into a large pot.

3

Add 20-30 ml of water and a splash of freshly squeezed lemon juice to the pot.

4

Bring the mixture to a boil, stirring to combine the water and apples.

5

Cover the pot and let it simmer gently for 20 minutes, reducing the heat.

6

In a skillet, melt butter and add breadcrumbs, toasting them until golden.

7

Once the breadcrumbs have absorbed the butter, add 2 tablespoons of sugar and a pinch of salt, stirring to combine.

8

Toast the breadcrumbs until they are crispy and the sugar has melted, then spread them on parchment paper to cool.

9

Once the apple mixture is done, remove the lid and check that the apples have softened and broken down.

10

Add 1 teaspoon of sugar and 1 teaspoon of vanilla sugar to the apple mixture, stirring well.

11

Transfer the apple compote to another container to cool completely, either at room temperature or in the fridge.

12

Once cooled, layer the apple compote in two glasses or dessert bowls.

13

Add a generous layer of the crispy breadcrumbs on top of the apple compote.

14

Repeat the layering with more apple compote and finish with another layer of breadcrumbs.

15

Top with freshly whipped cream or cream from a siphon.

16

Garnish with additional breadcrumbs and some lingonberries or jam on top.
