Preheat the oven to 350 degrees Fahrenheit.
Prepare the apples: chop 3/4 of one large apple for the batter and slice the other apple for decoration.
If worried about oxidation, add a squeeze of lemon juice to the apples.
Combine wet ingredients: mix 120 milliliters of vegetable oil, 120 milliliters of milk, and 1 teaspoon of vanilla extract in a measuring cup.
In a separate bowl, combine dry ingredients: mix 200 grams of all-purpose flour, 1 teaspoon of cinnamon, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
In a stand mixer, whip together 2 large eggs and 200 grams of granulated sugar until the mixture doubles in volume and reaches ribbon stage (about 3-5 minutes).
Gradually mix in the wet ingredients in two stages, followed by the dry ingredients in two stages, mixing for about five seconds each time to avoid over mixing.
Fold in the chopped apples gently into the batter.
Prepare a 9-inch round pan by oiling it and adding a parchment round to the bottom.
Pour the batter into the prepared pan and arrange the sliced apples on top in a circular pattern.
Sprinkle brown sugar and cinnamon over the top of the cake.
Bake in the oven for 40-45 minutes or until done.
Let the cake cool in the pan for about 5 minutes before transferring it to a cooling rack.
Allow the cake to cool completely before slicing and serving.
