Baked Cod Fish

MediterraneanGRmain
25 min
easy
4 servings
Servings4
4 cod loin fillets
1/2 cup seasoned panko breadcrumbs
2 cloves fresh garlic, minced
1/4 cup fresh grated parmesan cheese
2 tbsp fresh parsley, chopped
1 tsp lemon pepper seasoning
1/2 tsp black pepper
1 tsp salt
2 tbsp olive oil
1/4 cup white wine
1 tsp smoked paprika
2 tbsp capers
2 lemon wedges

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

Cut the cod loin into portions, ensuring each piece is about the same size.

2

Pat the fish dry to remove moisture and let it come to room temperature.

3

In a bowl, combine seasoned panko breadcrumbs with shredded fresh garlic.

4

Add fresh grated parmesan cheese to the breadcrumb mixture.

5

Mix in fresh parsley to the breadcrumb mixture.

6

Season the breadcrumb mixture with lemon pepper seasoning, additional black pepper, and a little salt.

7

Drizzle olive oil into the breadcrumb mixture and mix until it reaches the right consistency, adding more oil if it looks dry.

8

Season one side of the fish with salt and pepper liberally.

9

Heat a cast iron pan over medium-high heat and add oil when hot.

10

Place the fish seasoned side down in the pan, ensuring it sizzles upon contact.

11

Cook the fish for 1-2 minutes to get a sear on that side.

12

Splash a little white wine into the pan.

13

Pile the breadcrumb mixture high on each piece of fish without patting it down.

14

Sprinkle smoked paprika on top of the breadcrumbs for color and flavor.

15

Add capers on top of the breadcrumbs.

16

Spray the top of the breadcrumbs with a little oil to prevent burning.

17

Transfer the pan to the oven set to low broil, with the rack close to the bottom, and broil for 10-15 minutes, keeping an eye on it to prevent burning.

18

Remove from the oven when the breadcrumbs are golden brown and the fish is fully cooked.

19

Garnish with fresh chopped parsley and lemon wedges.
