Rinse the cod fish with cold water and pat dry with a paper towel.
Arrange the cod in a baking dish and season with kosher salt.
Coat the fish with olive oil or clarified butter, flipping to ensure even coverage.
Prepare a crumb topping by melting butter in a small pan and mixing it with breadcrumbs or crushed crackers seasoned with paprika.
Once the breadcrumbs have absorbed the butter and reached a wet sand consistency, top the fish with the breadcrumb mixture, letting some fall into the pan.
Place the baking dish in the center of a preheated 375°F oven for 25 minutes.
While the fish is baking, melt 2 tablespoons of butter in a pan and sauté 1 chopped medium shallot for about 2 minutes until translucent.
Add 1/4 cup of white wine to the pan and bring to a simmer, allowing it to reduce until most of the liquid evaporates.
Stir in 1 cup of heavy cream, a pinch of nutmeg, and a couple of twists of fresh ground black pepper, mixing well and bringing it back to temperature.
Reduce the heat and allow the cream to thicken, adding salt if needed.
Strain the sauce to remove the shallots for a smooth consistency.
Add fresh lemon juice to the sauce after the fish is cooked.
Plate the fish over a warmed plate with some of the sauce, and serve with vegetables like green beans or asparagus, and garlic mashed potatoes.
