1

Start by making the marinade for the cod.

2

In a bowl, combine 1/4 cup low-sodium soy sauce, a few tablespoons of rice wine vinegar, red chili pepper flakes, and 1 tablespoon of sesame seed oil.

3

Grate about 1-2 tablespoons of fresh ginger using a microplane and add it to the marinade.

4

Zest a lime and add about a teaspoon, then cut the lime in half and squeeze the juice of the whole lime into the marinade.

5

Whisk the marinade together.

6

Take the cod loin and cut it into 3 to 4 inch pieces.

7

Pour the marinade over the cod pieces and let it marinate for at least 15 minutes up to 3 hours in the refrigerator.

8

Before cooking, ensure the fish is at room temperature.

9

Preheat the oven to 400°F (204°C).

10

After marinating, top the fish with a few shakes of sesame oil and some sesame seeds.

11

In a pan, heat a few tablespoons of unrefined coconut oil and add 2 sliced cloves of garlic.

12

Add sambal to the pan according to your spice preference and stir.

13

Once the garlic is fragrant, add the washed and chopped kale to the pan and stir.

14

Add a few tablespoons of water to the pan to help steam the kale and incorporate the flavors from the bottom of the pan.

15

Season the kale with salt and pepper and cook until bright green.

16

Remove the kale from the heat and prepare to plate.

17

Place the sautéed kale on a plate, then add the cod on top after it has cooked for about 15 to 20 minutes in the oven until opaque.
