Vegan Brownies

1/2 cup vegan butter
1 tablespoon molasses (or light brown sugar)
1 cup cocoa powder
1 cup chocolate
1/2 cup hot coffee
1 teaspoon vanilla extract
1 cup granulated sugar
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips
1/2 cup chocolate chunks

Melt 1/2 cup vegan butter in a saucepan and bring it to a boil with 1 tablespoon molasses.

Add 1 cup cocoa powder to the hot liquid and whisk until combined.

Add 1 cup chocolate and 1/2 cup hot coffee to the mixture and whisk until melted and smooth.

Transfer the mixture to a large mixing bowl.

Add 1 cup granulated sugar and 1 teaspoon vanilla extract to the bowl and mix well.

Sift in 1 cup flour, 1 teaspoon baking powder, and 1/4 teaspoon salt, and stir until just combined, leaving some specks of flour.

Fold in 1/2 cup chocolate chips into the batter.

Spread the batter into a greased and parchment lined quarter sheet pan.

Top the batter with 1/2 cup chocolate chunks.
