Vegan Brownies

1 cup buckwheat flour
1/2 cup cane sugar
1/2 cup white sugar
1/3 cup cocoa powder
1 teaspoon baking soda
1 cup coconut butter
1 cup water

Preheat the oven to 350°F.

In a bowl, combine 1 cup buckwheat flour, 1/2 cup cane sugar, 1/2 cup white sugar, 1/3 cup cocoa powder, 1 teaspoon baking soda, and an optional pinch of salt. Whisk the dry ingredients together.

Add in 1 cup of coconut butter (made from blending 4 cups of shredded coconut in a Vitamix for 2 minutes) to the dry ingredients.

Pour in 1 cup of water, starting with half, and mix until all dry ingredients are incorporated. The mixture will be thick and cookie dough-like.

Spoon the mixture into a parchment-lined baking pan and press it down evenly using your hands.

Bake in the preheated oven for about 30 minutes.

Once baked, let the brownies cool in the pan for as long as possible before removing.
