The sweet, crunchy exterior contrasts beautifully with the tartness of the fruit, making it a favorite treat during festivals and celebrations. Today, variations include other fruits like strawberries and grapes, enjoyed by people of all ages.

Clean the bamboo sticks to prevent mold and dry them for later use.
Pick off the stems from the fruits.
Prepare the syrup by combining single-crystal rock sugar with dragon fruit juice and water.
Perform the cold water test by dropping boiling syrup into cold water to evaluate its thickness.
Heat the syrup in a thick kettle on medium heat until it reaches 120°C, then lower the heat to prevent rapid temperature changes.
Boil the syrup to about 140°C, then lower the heat to minimum.
Prepare ice cubes and cold water while monitoring the syrup temperature.
Once the syrup reaches 150°C, rapidly insert the skewers into the syrup, tilting the kettle and rotating the skewers for an even coat.
Soak the coated skewers in ice water to solidify the syrup quickly.
Stick the skewers vertically or lay them on an oiled plate to cool.
Cover the finished skewers with baking sheets to prevent sticking and refrigerate them.
Remove the strawberries quickly from the ice water after coating to prevent them from dissolving due to moisture release.
Turn off the heat after coating to prevent the syrup from turning into bitter caramel.
