Soak 20 grams of glass noodles while preparing the other ingredients.

Cut 2 eggplants into slices 1 centimeter thick and soak them for 5 minutes in water with 2 tablespoons of white vinegar to prevent oxidation.

Drain the eggplants.

Cut 1 carrot into very small cubes and place them in a mixing bowl.

Chop the green part of the green onion and add it to the mixing bowl with the carrots, keeping the white part aside.

Remove the heart from the eggplant to create rings and cut the heart into small cubes.

Drain the glass noodles and cut them into small chunks, then add them to the mixing bowl.

Chop 1 clove of garlic and add it to the mixing bowl.

Cut the chicken breast into chunks and blend them.

In a pan, heat 1 tablespoon of vegetable oil over high heat, then add the chopped garlic and stir for 20 seconds.

Add the chicken and stir, then add 1/2 teaspoon of salt and a pinch of ground pepper, stirring for 3 minutes until the chicken is cooked.

Add the white parts of the green onion and stir for 20 seconds, then transfer everything to the mixing bowl.

To prepare the two Peppers powder, roast 1 teaspoon of Citron pepper over low heat, stirring regularly until fragrant, about 1 minute and 30 seconds, then grind it with 1 teaspoon of whole black pepper and 1/2 teaspoon of salt.

Add 1 teaspoon of salt to the mixing bowl along with 3 eggs and mix well.

In a pan, heat 3 tablespoons of vegetable oil over low heat, then add the eggplant rings and cover with a lid, cooking for 2 minutes.
