1

Finely chop the onion and garlic cloves.

2

In a saucepan, add a splash of oil and wilt the onion on a low flame.

3

Raise the flame and brown the ground beef, then add the minced garlic, cinnamon, oregano, salt, pepper, tomato puree, and tomato paste; cook on a low flame for at least 30 minutes, adding a little water if necessary.

4

Slice the eggplants about 1 cm thick and cook them in a pan with a drizzle of oil until tender, adding salt to taste.

5

Thinly slice the potatoes, place them on a baking sheet lined with baking paper, season with oil and salt, and bake in the oven at 200° for about 25 minutes.

6

In a small saucepan, melt the butter, then pour in the flour and cook for a few minutes.

7

Pour in the hot milk in several batches, stirring continuously until you get a thick mixture; add some nutmeg and salt, then incorporate the egg yolks with the heat off.

8

Grease an oven dish with a drizzle of oil, form the first layer with the potatoes, then create a second layer with the eggplant, pour the meat sauce on top, add another layer of eggplant, then the béchamel sauce, and sprinkle with grated parmesan cheese.

9

Bake at 180 degrees for about 45 minutes.

10

Take it out of the oven and enjoy!
