Clean the chicken under cold water and pat dry.
Heat vegetable oil in a large pot over medium heat until shimmering.
Add chopped onions and sauté until translucent, about 5 minutes.
Stir in chopped tomatoes, ginger, garlic, and pepper; cook for 3-4 minutes until fragrant.
Add chicken to the pot and brown on all sides, about 5-7 minutes.
Pour in enough water to cover the chicken; add bay leaves and thyme.
Bring to a boil, then reduce heat and simmer for 30-40 minutes until chicken is cooked through.
Remove the chicken and set aside to cool slightly; shred the meat from the bones.
Blend the soup base until smooth, then return to the pot.
Add shredded chicken, carrots, and bell peppers; simmer for an additional 10-15 minutes.
Adjust seasoning with salt and lemon juice to taste.
Garnish with chopped scallions and coriander before serving.
