1/2 cup water
1/2 teaspoon vanilla essence

Grate the jaggery or break it into small cubes.

Add jaggery, cinnamon stick, and water into a heavy bottomed pan.

Cook on low flame until the jaggery dissolves and turns into a trickle, stirring occasionally.

Crack the eggs into a bowl and add vanilla essence, then whisk until mixed.

Once the jaggery mixture is cooled, add it to the egg mixture and mix gently without over beating.

Add thick coconut milk and a pinch of salt, then mix gently again without over beating.

Strain the mixture through a strainer to remove any residuals.

Pour the mixture into a heatproof bowl and cover with thin foil.

Bake in the oven at 180 Celsius for 30 to 40 minutes.

After 20 minutes, remove the foil and bake for another 10 to 15 minutes.

Once puffed up, remove from the oven and let cool, noting it will shrink in size.

Garnish with roasted cashew nuts.
