Watalappan is a traditional Sri Lankan dessert with roots in the Malay community, often enjoyed during festive occasions and celebrations. This rich coconut custard is made with simple ingredients like coconut milk and jaggery, showcasing the island's tropical bounty. Combine coconut milk and jaggery in a saucepan over low heat until jaggery dissolves completely.
Remove from heat and let the mixture cool slightly.
Whisk eggs in a separate bowl until frothy.
Add the cooled coconut mixture to the eggs slowly, whisking continuously to avoid curdling.
Stir in cardamom, nutmeg, vanilla extract, and salt until well combined.
Strain the mixture through a fine sieve into a bowl to remove any lumps.
Prepare a steamer by bringing water to a boil.
Pour the mixture into a greased pudding mold or heatproof dish.
Place the mold in the steamer and cover with a lid.
Steam for 45-60 minutes, or until the pudding is set and a toothpick comes out clean.
Remove from the steamer and let cool at room temperature.
Refrigerate for at least 2 hours before serving.
