Watalappan is a traditional Sri Lankan dessert with roots in the Malay community, often enjoyed during festive occasions and celebrations. This rich coconut custard is made with simple ingredients like coconut milk and jaggery, showcasing the island's tropical bounty. Its unique flavor profile, enhanced by spices like cardamom and nutmeg, makes it a beloved treat in Sri Lanka and among those familiar with its cultural significance.

Almond milk reduces calories while maintaining creaminess.
Combine thick coconut milk, jaggery, and sugar in a saucepan over low heat until jaggery dissolves completely.
Add water and stir to combine.
Remove from heat and let the mixture cool slightly.
Whisk eggs in a separate bowl until frothy.
Add the cooled coconut mixture to the eggs slowly, whisking continuously to avoid curdling.
Stir in salt, cardamom, and cinnamon until well combined.
Strain the mixture through a fine sieve into a bowl to remove any lumps.
Prepare a steamer by bringing water to a boil or using a rice cooker.
Pour the mixture into a greased thin silver bowl or heatproof dish.
Place the bowl in the steamer and cover with a lid, using paper and cloth to trap steam if possible.
Steam for 45-60 minutes, or until the pudding is set and a toothpick comes out clean.
Remove from the steamer and let cool at room temperature.
Refrigerate for at least 2 hours before serving.
