Bread Soup, or Soup Joumou, is a traditional Haitian dish with roots in the country's history of independence. It is often served on January 1st to celebrate freedom from slavery, symbolizing resilience and unity. The dish blends hearty ingredients like pumpkin and bread, creating a comforting meal that reflects Haitian culture. Today, it is enjoyed both in Haiti and among the diaspora, with variations that may include different meats or vegetables.

Prepare the beef by cutting it into cubes and marinating with lime juice, salt, and pepper for at least 30 minutes.
Heat oil in a large pot over medium heat until shimmering.
Add the marinated beef and brown on all sides, about 5-7 minutes.
Remove the beef and set aside, then add chopped onions, garlic, carrots, and celery to the pot.
Sauté the vegetables until softened, about 5 minutes.
Stir in chopped pumpkin, thyme, and bay leaves, cooking for another 3-4 minutes.
Return the beef to the pot and add enough water to cover the ingredients.
Bring to a boil, then reduce heat and simmer for 1-1.5 hours until the beef is tender.
Remove the beef, shred it, and set aside.
Blend the soup until smooth, then return it to the pot.
Add torn pieces of bread to the soup and stir until they absorb the liquid, about 5 minutes.
Adjust seasoning with salt and pepper to taste.
Serve hot, garnished with parsley.
