Place a pot over medium heat and add a few cups of water.
Add 2 to 3 bay leaves and 1 cinnamon stick to the water.
Cover the pot and let it come to a boil.
In a bowl, mix plantain flour with cold water to form a smooth paste.
Add tania flour and green banana flour to the bowl and mix with more cold water until thick and smooth.
Once the water in the pot is boiling, scrape the flour mixture into the pot.
Use a whisk to constantly stir the porridge every 1 to 2 minutes to prevent lumps.
Let the porridge cook for about 15 minutes while stirring.
Add 1 tablespoon of mixed essence to the porridge for flavor.
Sprinkle ground cinnamon and nutmeg on top as desired.
Sweeten with sweetened condensed milk to taste before serving.
