500g split peas
1.5 liters water
200g smoked sausage
150g bacon
2 medium carrots, diced
1 large onion, chopped
2 stalks celery, diced
2 potatoes, diced
2 cloves garlic, minced
1 tsp dried thyme
1 bay leaf
to taste salt
to taste pepper

Rinse the split peas under cold water and drain.

In a large pot, combine the split peas and water. Bring to a boil over medium heat.

Add the smoked sausage, bacon, carrots, onion, celery, potatoes, garlic, thyme, and bay leaf to the pot.

Reduce the heat to low and let it simmer for about 1.5 to 2 hours, stirring occasionally.

Once the peas are soft and the soup has thickened, remove the sausage and bacon.

Slice the sausage and bacon into bite-sized pieces and return them to the pot.

Season with salt and pepper to taste, and remove the bay leaf.

If the soup is too thick, add more water to reach your desired consistency.

Serve hot, garnished with fresh herbs if desired.
