Preheat oven to 325°F (163°C).
In a large bowl, combine 2 cups of regular rolled oats, 1.5 cups of sliced almonds, 0.5 cup of unsweetened coconut, and 0.5 cup of cocoa nibs.
In a small saucepan, melt 0.25 cup of coconut oil and 5 tablespoons of maple syrup over low heat until combined.
Add 0.5 teaspoon of ginger, 0.5 teaspoon of cinnamon, and a little nutmeg to the wet mixture, stirring until well mixed.
Pour the wet mixture over the dry ingredients, mixing until everything is fully coated.
Spread the mixture onto a parchment-lined baking tray in an even layer.
Bake in preheated oven for 25 minutes, stirring at least twice during the cooking process until golden brown.
Remove from oven and let cool slightly before adding dried fruits.
Stir in 3/4 cup of dried cranberries and 0.5 cup of diced mango while the granola is still warm.
Let the granola cool completely before packing it away.
