Add jumbo oats to a bowl.
Add flaked coconut and pecans to a blender and blitz for a few seconds until coarsely grated.
Add almonds to the blender and blitz until fine consistency.
Add sunflower seeds and oat flour to the blender and blitz until fine consistency.
In a separate bowl, warm coconut oil and mix with maple syrup and spices (cinnamon and nutmeg).
Heat the mixture on the stove for a couple of minutes until flavors mingle and coconut oil melts.
Combine the dry mixture with the maple syrup mixture and mix thoroughly.
Spread the mixture evenly on a baking tray lined with baking paper.
Bake in the oven at 180 degrees Celsius for 10 minutes, then stir and bake for another 10 minutes.
Allow the granola to cool for 5-10 minutes and break up clusters if needed.
Store in a jar and enjoy with milk or yogurt and fresh berries or banana.
