Start by preparing the ingredients: beef rib, chicken, ham bone, salted pig's foot, and knee bone.
In a large pot, add all the meats and cover them with water.
Add chickpeas to the pot.
Add cabbage and chorizo to the pot.
Bring the pot to high heat and cover it to cook for about 30 minutes to an hour.
After boiling, reduce the heat and skim off excess fat from the broth.
Add chorizo to the vegetables in the pot and bring to a boil again, then reduce heat to low and simmer for about an hour until the chickpeas are cooked.
While the chickpeas are cooking, prepare the filling: beat an egg, add salt, chopped parsley, and minced garlic, and mix well.
Add bread crumbs to the egg mixture, allowing them to soak.
Optionally, prepare a filling with chickpeas instead of bread crumbs.
In a pan with heated olive oil, fry the chickpea filling and the bread filling until golden brown.
Add a potato to the pot with the chickpeas and cook for an additional 15 minutes.
Once everything is cooked, serve the dish, noting that there is leftover broth for making soup.
