Keto Pasta

Cultural Context

Keto pasta is a modern adaptation of traditional pasta dishes, designed to fit into the ketogenic diet which emphasizes low carbohydrates. Using vegetables like zucchini or konjac-based shirataki noodles, it allows for a pasta experience without the carbs. This dish has gained popularity among health-conscious eaters and those seeking alternatives to wheat-based pasta, making it a staple in many households.

olive oil

🥗Healthier: avocado oil

💰Cheaper: canola oil

Canola oil is less expensive and has a neutral flavor.

1

In a large mixing bowl, combine 90 g of coconut flour, 13 g of xanthan gum, 3 g of unflavored gelatin powder, and 4 tsp of salt.

2

Sift everything together until all the dry ingredients are fully combined and there are no lumps.

3

Add 2 large room temperature eggs and stir until all the dry ingredients are moist and a crumbly dough forms.

4

Push all the dough crumbles together and form it into a ball, then knead the dough ball inside the bowl for about 1 minute until smooth.

5

Line a clean work surface with parchment paper or a silicone mat and sprinkle lightly with flour (coconut flour or oat fiber).

6

Place the dough onto the lightly floured work surface and sprinkle a tiny bit more flour over the top.

7

Cover the dough with another piece of parchment paper and roll it out very thin, about a 16th of an inch.

8

Use a pizza cutter or sharp knife to cut the dough into desired size pieces for pasta.

9

To shape macaroni, cut the dough into 1-inch squares, then use a toothpick or metal skewer to create a hole in the center and roll the corners around it to seal.

10

Spread the noodles in a single layer on a lined baking sheet and allow them to dry at room temperature for at least 24 hours, preferably 48 hours.

11

Once fully dry, store them uncovered at room temperature for up to 3 days or freeze in a ziplock bag for up to 1 month.

12

To cook the pasta, bring roughly 6 cups of water to a full boil.

13

Boil the pasta for 45 seconds to 1 minute until they float to the top and are slightly lighter in color, ensuring not to overcook them.

14

Drain the noodles and use them in any recipe that requires pasta.
