Add 1 cup (112 grams) of full fat shredded mozzarella cheese to a large bowl.
Add 1/4 teaspoon of xanthan gum to the cheese and mix it in with a teaspoon.
Microwave the cheese and xanthan gum until the cheese melts, about 1 minute.
Once melted, mix the cheese into a small ball with a spatula.
Add 1 large egg yolk to the warm cheese (not hot) and fold it in using one hand while mixing with a spatula in the other.
Roll out the dough between two sheets of parchment paper to about an eighth of an inch thick, keeping it in a square or oval shape.
Spray a pizza cutter with baking spray and cut the dough into noodle strands.
Place the shaped pasta on a baking sheet and refrigerate overnight or for at least 8 hours.
After refrigerating, separate the pasta strands.
Fill a large pot with water and bring it to a boil.
Add the pasta to the boiling water and cook for 1 minute, setting a timer to avoid overcooking.
Wash and strain the noodles under water that is not too hot or too cold, shaking off excess water.
Serve the pasta on a plate with sauce and garnish with basil.
