Prepare the tomato sauce by heating 2 tablespoons of olive oil in a pan, adding 1 small onion, and sautéing until soft.
Add 300 grams of tomato puree, season with salt and fresh basil, and let simmer.
For the filling, heat another 2 tablespoons of olive oil and add a mixture of chopped carrot, celery, and onion, cooking until softened.
Add 500 grams of mixed minced meat, season with salt, and pour in 50 ml of red wine, cooking until the wine evaporates.
Stir in 50 grams of chopped mortadella, 50 grams of breadcrumbs, 70 grams of grated cheese, and 1 medium egg to combine the filling.
Stuff the cannelloni with the meat mixture and place them in a baking dish.
Cover the cannelloni with the prepared tomato sauce and béchamel sauce, then sprinkle with additional grated cheese and dot with butter.
Bake in the oven until golden and bubbly.
