Coconut oil is lower in saturated fat, while margarine is often more budget-friendly.
Put 2 and 1/4 cups of all-purpose flour in a large bowl.
Add 1 tablespoon of granulated sugar and 1 teaspoon of salt to the flour and whisk together.
Grate 1 cup (2 sticks) of very cold unsalted butter into the flour mixture using a box grater, mixing intermittently with a spoon.
Add about 7 to 8 tablespoons of ice water gradually while stirring until the dough comes together but remains shaggy.
Transfer the dough to a lightly floured surface and work it together into a rectangle about 6 by 3 inches.
Wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes.
Remove the dough from the fridge and roll it out into an 8 by 12 inch rectangle on a lightly floured surface.
Fold the shorter end of the dough into the center, then fold the other end over it like a letter.
Rotate the dough 90 degrees, roll it out again into an 8 by 12 inch rectangle, and repeat the folding process.
Repeat the folding and rolling process until you've done four turns of the dough.
Wrap the dough tightly in plastic wrap and chill for at least 30 minutes before using.
