2 Tbsp (40g) butter
1/2 cup (120g) water
1/2 tsp salt
1 Tbsp sugar
1/2 cup (120g) room temp butter

Add 2 1/4 cups (280g) all-purpose flour to a mixing bowl.

Add 1/2 tsp salt and 1 Tbsp sugar to the flour and mix.

Cut 2 Tbsp (40g) butter into small pieces and add to the flour mixture.

Rub the butter into the flour until well combined.

Add 1/2 cup (120g) water gradually, mixing until a dough forms.

Divide the dough into 2 parts and cover.

Leave the dough to rest for 20 minutes.

Take 1/2 cup (120g) room temp butter and apply half of it to one part of the dough.

Wrap the dough and freeze for 30-40 minutes.

Wrap the dough again and freeze for another 15 minutes.

If the room is warm, keep the other part of the dough in the freezer while rolling the rest.

Divide the dough into 6 equal parts.

Add chocolate chips to the dough as desired.

Separate the egg white from the yolk.

Brush the pastries with egg white and then with beaten yolk.

Sprinkle sugar on top of the pastries.

Bake in a preheated oven at 190°C (375°F) for 30 minutes.
