200ml cold water
1 teaspoon salt
250g unsalted butter (50g for dough and 200g for layers)

In a bowl sift flour.

Add butter, salt, and water and start to knead until the dough forms. You can use a stand mixer for easy knead.

When the dough is formed, transfer it to a well-floured surface and knead for another 4-5 minutes.

Try to shape it into a square, then wrap in cling film. Place in the fridge for 20 minutes.

In a zipper bag (20cm x 16cm), place the butter. Stretch the butter until the entire bag is filled. Place in the fridge for 20 minutes.

Stretch the dough double in size then butter sheet. Encase the butter into the dough like an envelope.

Roll until about 50cm in length. Fold and repeat the process one more time. Refrigerate for 20 minutes.

Repeat the process: roll 50cm and fold for 2 more times. Refrigerate for 20 minutes.

Roll and fold again. Refrigerate for 20 minutes.

Roll and fold for the last time. If you want to use it straight, just roll into your favorite shape and bake at 180°C for 30 minutes.
