65g cold water
5g rice vinegar
5g sugar

Cut the butter into 1cm cubes and chill in the freezer until firm.

Add the sugar and salt to the flour, mix well.

Rub the flour and butter with your fingertips until sandy in texture. If the mixture feels warm, chill in the freezer for 10 minutes or until cool to the touch.

Mix vinegar with water and add 3/4 of this liquid to the flour mixture and combine. Adjust the consistency with the remaining liquid until the dough comes together, but is not wet.

Brisée the dough on the table.

Gather the dough and roll it out to ~1cm thickness, then cut the dough in half and stack them together, repeat 4 times.

Wrap the dough and rest in the fridge for at least 4 hours.
