Check if the avocado is ripe by pressing it gently.
Cut the avocado in half and twist to separate the halves.
Remove the pit using a knife.
Make cuts in the flesh of the avocado to scoop it out easily.
Scoop out the flesh of the avocado into a bowl.
Mash the avocado with a fork, leaving some pieces for texture.
Chop 1 medium red onion finely.
Chop some fresh parsley finely.
Cut a lime in half and remove the seeds.
Squeeze the lime juice over the mashed avocado to prevent browning.
Add the chopped onion and parsley to the avocado mixture.
Season with salt and 1 teaspoon black pepper and mix well.
Toast a slice of bread in a toaster or on a pan.
Spread the avocado mixture on the toasted bread.
For the second recipe, chop 1 medium tomato into small pieces.
Remove the seeds from a green chili and chop it finely.
Add the chopped tomato and green chili to the remaining avocado mixture.
Grate 2 cloves of garlic and add to the mixture.
Adjust seasoning with salt and black pepper as needed and mix well.
Spread this mixture on another slice of toasted bread and sprinkle with red chili powder and grated cheese.
For the salad, slice the remaining avocado and cut it into semi-circles.
Soak the sliced red onion in water for 10 minutes to reduce its pungency.
Peel and slice a cucumber into semi-circles.
Add 2 tablespoons lime juice to the sliced avocado.
Add the sliced cucumber, 6-8 roasted almonds, and half a chopped tomato to the bowl.
Chop a bunch of parsley and add it to the salad.
Add the soaked red onion to the salad.
Season with salt and 1 teaspoon black pepper.
Drizzle 2 tablespoons of extra virgin olive oil over the salad and mix well.
