1

Place a medium-sized pot over medium heat.

2

Add smoked turkey tails to the pot.

3

Pour in chicken broth and water just enough to cover the turkey tails.

4

Cover the pot with a lid, leaving a little crack on the side, and let it cook for about 1 hour.

5

Remove the tough stems from the collard greens and discard them, or chop them into small pieces to add later.

6

Slice the collard greens lengthwise and widthwise into ribbons.

7

Add collard greens to a large baking pan, along with lemon juice and salt.

8

Fill the pan with cool water and let the collard greens soak for a while.

9

Rinse the collard greens in a colander under running water for 3 to 5 minutes to remove salt.

10

After 1 hour, turn off the heat and remove the turkey tails from the pot.

11

Chop the turkey tails into small pieces.

12

In a large pot over medium-high heat, add butter and vegetable oil and stir to combine.

13

Add chopped onions and peppers to the pot and sauté for about 3 minutes.

14

Add half of the collard greens to the pot, then add the remaining collard greens once they have shrunk down.

15

Pour in the leftover broth from cooking the turkey tails, along with some more broth and water.

16

Add apple cider vinegar, garlic, chopped turkey meat, and all the seasonings including the two bullion cubes.

17

Stir everything together and cover the pot with a lid, leaving a little crack on the side.
