Toast black bread until it gets a nice thick crust and is almost charred

Cool the toasted bread and break it into small pieces

Add the bread pieces to a large bowl

Add 2 tablespoons of sugar and 2 liters of boiling water to the bowl and stir until the sugar dissolves

Cover the mixture and let it cool to room temperature

Transfer the mixture into a container, including the bread pieces

Add half of the raisins to the container

Cover the container with cheesecloth or a lid and leave it in a warm dark place for around 24 hours

After 2-3 days, check for signs of fermentation

Strain the liquid into a plastic bottle using a funnel and cheesecloth, discarding the solids

Add 1 teaspoon of sugar to the bottle and seal it

Shake the bottle and press down to carbonate

Refrigerate the bottle for 1-2 days until it is cold and carbonated
