1 pimiento pepper chopped (OPTIONAL)
2 sprigs culantro chopped
1 large thick leaf thyme leaf chopped
1 tbsp. amchar masala
1/2 cup sugar (use more or less to taste)
2 cups tamarind pulp
2 cups water (use more or less to get to the consistency you want)
salt to taste (around 1 tsp.)
