1 tsp of concentrated meat broth

5 oz/150 g grated tomato or tomato sauce
1/3 cup white wine (optional)
a few sprigs of thyme
a couple of sprigs of rosemary
1 bay leaf

Pork or beef shanks provide a similar texture and flavor at a lower cost.

Heat up the air grill until hot.

Take 2 Osso Buco Steaks and let them sit at room temperature for about 2 hours.

Rinse the meat and blot with paper towels to remove excess moisture.

Make cuts in the meat.

Season the meat with salt and black pepper on both sides.

Roll each piece in 2 tbsp of flour to create a thin layer.

Preheat the air grill and add a little vegetable oil.

Fry the pieces of meat in the air fryer for 5-6 minutes on one side until golden.

Chop 1 onion, 1 stick of celery, and 1 carrot for the sauce.

Brown the meat on the other side for another 5 minutes.

In the meantime, prepare the sauce ingredients: add 2 cloves of minced garlic, 1 tsp of concentrated meat broth, a little dried chili pepper (optional), and black pepper.

Add 5 oz/150 g of grated tomato or tomato sauce to the mixture.

Pour in 1/3 cup of white wine (optional).

Transfer the roasted meat to the vegetables in the pot.

Add a few sprigs of thyme, a couple of sprigs of rosemary, and 1 bay leaf.

Cover with baking foil and cook at 340ºF/170ºC for 60 minutes.

Check for doneness after 45 minutes; the meat should be tender enough for a fork to go in easily.
