Peel the tomatoes and cut them into cubes.
Chop up the onion and celery root.
Heat oil in a pot and add the chopped vegetables except for the garlic.
Cook until the onions become translucent.
Add crushed garlic and cook briefly.
Add the chopped tomatoes, salt, pepper, and about 1 cup of water.
Add parsley and a pinch of sugar.
Cook for about 30 minutes.
Remove parsley from the soup and blend until smooth using an immersion blender.
Prepare dumplings by whisking 2 eggs and gradually adding flour until the mixture holds shape on a spoon.
Let the dumpling mixture sit in the fridge for about 30 minutes.
Drop spoonfuls of the dumpling mixture into the soup and cook for 10 minutes.
Serve the soup hot.
