Today, it remains a beloved treat, especially around Christmas, with variations found across Europe, showcasing local spices and flavors.

Preheat the oven to 180°C (350°F).
In a large bowl, mix flour, baking soda, and spices until combined.
In another bowl, cream together butter and brown sugar until light and fluffy.
Add honey, eggs, and vanilla extract to the butter mixture; mix until smooth.
Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Roll out the chilled dough on a floured surface to about 0.5 cm thickness.
Cut the dough into desired shapes using cookie cutters.
Place the cut shapes on a baking sheet lined with parchment paper.
Bake in the preheated oven for 10-12 minutes until lightly golden.
Allow the gingerbread to cool on a wire rack.
Mix powdered sugar with a little water to create a glaze and decorate the cooled gingerbread.
