Crush whole spices in a mortar and pestle and grind them with a spice grinder.
Mix together flour, icing sugar, butter, spices, honey, and eggs in a bowl.
Add baking powder and cocoa for color, mixing until a nice dough forms.
Wrap the dough in plastic wrap and refrigerate for at least an hour or overnight.
Roll out the dough to about 3-4 mm thick on a floured surface.
Cut out shapes with cookie cutters.
Prepare an egg wash by mixing an egg with a splash of rum and brush it on the cookies.
Bake in the oven for 10-12 minutes, depending on the size of the cookies.
Immediately slide the cookies off the tray after baking to stop the cooking process.
Prepare royal icing with egg white, lemon juice, and powdered sugar, ensuring to sieve the sugar to remove lumps.
Fill the icing into a piping bag and decorate the cookies.
