Traditionally served as a breakfast or snack, Doubles consists of two soft, fried flatbreads (bara) filled with spicy chickpeas (channa) and topped with various chutneys. This dish reflects the blend of Indian and Caribbean cultures, with its flavors and spices being a testament to Trinidad's diverse history. Today, Doubles can be found in many variations across the Caribbean and beyond, making it a beloved treat for many.

Soak chickpeas overnight in water.
Drain and rinse chickpeas, then boil in fresh water until tender, about 1 hour.
Mash boiled chickpeas with curry powder, turmeric, and salt until smooth.
In a bowl, mix flour, baking powder, and salt.
Add water gradually to the flour mixture to form a soft dough.
Divide dough into small balls and flatten them into discs.
Heat water in a pot to boiling and gently drop in the discs, cooking until they puff up, about 2-3 minutes.
Remove and drain on paper towels.
Prepare the chutney by blending onion, garlic, pepper, and lime juice until smooth.
Assemble by placing mashed chickpeas on a disc, topping with chutney, and adding cucumber and cilantro.
