Originating from Trinidad, Doubles is a popular street food that showcases the island's rich culinary heritage. Traditionally served as a breakfast or snack, Doubles consists of two soft, fried flatbreads (bara) filled with spicy chickpeas (channa) and topped with various chutneys. This dish reflects the blend of Indian and Caribbean cultures, with its flavors and spices being a testament to Trinidad's diverse history. Today, Doubles can be found in many variations across the Caribbean and beyond, making it a beloved treat for many.

Pick out dry chickpeas and add them to an instant pot or regular pot.
Add yellow split peas to the pot and wash thoroughly until the water runs clear.
Fill the pot with water and add 1 tablespoon of baking soda. Let it soak overnight.
The next day, knead the dough by adding salt, sugar, yeast, and turmeric to all-purpose flour.
Mix to combine and knead with warm water until you achieve the desired texture.
Add oil to the dough and let it sit in a warm spot to rise for about 1-2 hours.
Drain the soaked chickpeas and add clean water and salt, then pressure cook for 20 minutes.
If you prefer, you can boil the chickpeas for about 1.5 hours until soft.
Make small dough balls about the size of a golf ball and let them sit for 15 minutes.
Spread the dough balls as thin or thick as you want and fry them in very hot oil for about 3-5 seconds per side.
Place the fried dough in an insulated container to keep warm.
Mash the cooked chickpeas using a dalney, adding roasted cumin and turmeric with a little water.
Mix until dissolved, then add to the chickpeas along with green seasoning and more salt as needed.
Mash until you reach your desired consistency, then add baking soda and let it sit for 10 minutes.
Assemble the doubles by adding chickpeas to the fried dough along with condiments like coconut chutney, roasted pepper sauce, grated cucumber, and sweet chutney if desired.
