Start by toasting the sesame seeds in a pan.

While keeping an eye on the sesame seeds toasting, start chopping the cabbage, red onion, carrots, aonori flakes, and ginger.

Prepare the aonori flakes, ginger, and katsoubushi (bonito flakes).

Take off the sesame seeds from the pan.

Add all ingredients into a bowl and season with salt.

Crack an egg and add it to the mixture.

Season the mixture with hondashi (or soy sauce).

Add 2 tablespoons of flour and mix everything together.

Add a second egg and mix until the water is drawn out from the vegetables.

Add pickled ginger.

Finish by adding all toppings: mayonnaise, green onion, aonori flakes, sesame seeds, and katsoubushi.
