Sourdough English muffins have their roots in the early American baking tradition, where sourdough was a staple due to its natural leavening properties. These muffins are celebrated for their unique texture and flavor, with nooks and crannies perfect for holding butter and jam. Today, they remain a beloved breakfast item, often enjoyed toasted and are popular in various adaptations around the world.

Ingredients

  • sourdough starter
  • all-purpose flour
  • water
  • milk
  • butter
  • honey
  • salt
  • baking soda
  • cornmeal
  • yeast
  • sugar

Instructions

  1. 1Mix sourdough starter with warm water until combined.
  2. 2Add all-purpose flour and mix until a shaggy dough forms.
  3. 3Let the dough rest for 30 minutes to allow gluten to relax.
  4. 4Incorporate milk, melted butter, honey, and salt into the dough.
  5. 5Knead the dough on a floured surface for about 10 minutes until smooth.
  6. 6Place the dough in a greased bowl and cover with a damp cloth; let rise for 1-2 hours until doubled.
  7. 7Punch down the dough and shape it into a log.
  8. 8Cut the log into equal pieces and shape each into a round muffin.
  9. 9Dust a baking sheet with cornmeal and place the muffins on it, spacing them apart.
  10. 10Cover the muffins with a cloth and let them rise for another 30-60 minutes.
  11. 11Preheat the oven to 375°F (190°C).
  12. 12Bake the muffins for 20-25 minutes until golden brown.
  13. 13Remove from the oven and let cool on a wire rack.
  14. 14For a traditional finish, toast the muffins on a griddle before serving.
