Sudanese Beef Stew

Heat oil in a large pot.
Add chopped onions and fry until browning.
Add tomatoes and allow to fry together for a few minutes until softened.
Add diced beef pieces and stir fry without adding water.
Add cinnamon stick, vegetable stock powder, coriander, and curry powder, stirring to combine.
Add black pepper to taste and continue frying the meat.
Add water and cover, cooking until the meat is about 80 percent cooked, about 35 to 40 minutes on medium heat.
Add tomato paste and garlic paste, stirring continuously to mash the onions into a thick base.
Add potatoes and carrots, stir to combine, and cook covered for another 15 minutes.
Add cumin powder and water to desired thickness, cover, and simmer on low heat for another 5 minutes.
Add salt to taste and adjust seasoning before serving.
