Choose a steak grade: select, choice, or prime. Prefer choice or prime for better marbling and flavor.
Select a ribeye steak with good marbling (little white flecks of fat) for tenderness and flavor.
Apply lime juice to both sides of the steak as a natural tenderizer.
If using a tougher cut, apply a tenderizer after the lime juice, ensuring it has no MSG or seasoning.
Generously season both sides of the steak with your preferred seasoning, rubbing it in well.
Place the seasoned steak in a Ziploc bag and refrigerate for 4 hours to allow flavors to enhance.
Prepare the grill, ensuring it is clean and hot. Use hardwood lump charcoal for best results.
Check the grill temperature by holding your hand over it; if you can't hold it for more than 5 seconds, it's hot enough.
Place the steak on the grill, close the lid, and cook for 3 to 4 minutes without opening the lid.
After 3 to 4 minutes, check the steak and flip it to cook the other side.
