1

Crack coriander seeds using a rolling pin, meat mallet, or coffee tumbler until coarse.

2

In a mixing bowl, combine cracked coriander, kosher salt, cracked black pepper, dried minced garlic, dried minced onion, red pepper flakes, and raw sugar.

3

Mix the ingredients together to create the steak rub.

4

Apply the rub generously on both sides and edges of the New York strip steaks.

5

Prepare the grill with coals on one side for both hot and cool zones.

6

Sear the steaks over high heat on the hot side of the grill for about 4 minutes without moving them.

7

Flip the steaks to sear the other side for another couple of minutes.

8

Check the doneness of the steaks; if too rare, move them to the cool side of the grill.

9

Close the lid to allow convection heat to finish cooking the steaks.

10

Target an internal temperature of 115 to 120°F, about 10 degrees below medium rare.

11

Once the target temperature is reached, remove the steaks from the grill and let them rest for about 5 minutes.
