Hutspot
Cultural Context
Hutspot is a traditional Dutch dish with roots in the 16th century, believed to have been eaten by soldiers during the Siege of Leiden. This hearty meal symbolizes comfort and sustenance, particularly during colder months. Today, it is often enjoyed in homes across the Netherlands, especially during the winter, and is commonly served with a side of meat, celebrating the country's agricultural heritage.

Olive oil provides healthy fats while margarine is often less expensive.

Plant-based milk can reduce calories, while water is a cost-effective substitute.
Start by cutting 1.5 kg of carrots into small pieces.
Cut approximately the same amount of potatoes, about 1.5 kg, into small pieces.
Cut about 0.5 kg of onions, starting with the onions first.
Place the chopped carrots, potatoes, and onions into a large pot.
Add enough water to cover the vegetables in the pot.
Bring the water to a boil over high heat.
Once boiling, reduce the heat and simmer until the vegetables are tender, about 20 minutes.
While the vegetables are cooking, prepare the vegetarian Rookworst by heating it up as it is already cooked.
Once the vegetables are tender, drain them, reserving some of the cooking liquid if needed.
Return the drained vegetables to the pot and mash them until smooth.
Add the heated vegetarian Rookworst to the mashed vegetables and mix well.
