Grate 2 medium sized carrots into a bowl.
Finely chop one handful of shallots and add to the bowl.
Chop one green chili and add to the bowl.
Chop one tomato and add to the bowl.
Chop half of a capsicum and add to the bowl.
Finely chop a handful of coriander leaves and add to the bowl.
Boil one medium sized sweet potato, peel off the skin, and chop into small cubes.
Grate a small piece of ginger and add to the bowl.
Add 2 garlic cloves to the bowl.
Add 2 cups cooked chana to the bowl, which were soaked overnight and pressure cooked with pink himalayan salt.
Squeeze in one whole lemon.
Add 1 teaspoon roasted jeera powder.
Add pink himalayan salt as needed.
Add 3/4 teaspoon amchur powder and a sprinkle of chaat masala (optional).
Add 1 tablespoon apple cider vinegar.
Add half teaspoon freshly ground black pepper powder.
Mix all ingredients together with a spoon.
Serve the salad in a bowl and drizzle in a couple of tablespoons of vegan cashew yogurt.
