Dutch Peasoup

Rinse split peas under cold water until the water runs clear.
Combine split peas and water in a large pot; bring to a boil over medium-high heat.
Reduce heat to low and simmer for 1-2 hours until peas are soft, stirring occasionally.
Add diced smoked sausage, carrots, celery, onions, leeks, and potatoes to the pot.
Stir in bay leaves and thyme; season with salt and black pepper to taste.
Continue to simmer for another 30-45 minutes until vegetables are tender.
Remove bay leaves before serving; adjust seasoning if necessary.
Serve hot, garnished with chopped parsley.
