1

Clean the beef tripe with hot water and boil it in plain water for about 2 hours, adding hot water as needed.

Allow the boiled tripe to cool for easier cutting.

4

Cut the tripe into small to medium cubes.

Pre-cook the mixture by adding seasoning salt to the meat and cooking on medium heat before adding water.

6

Allow the meat to cook on medium heat for about 30 minutes.

7

Add the stock from the tripe into the meat and cook for an additional 15 minutes.

8

In a larger pot, heat 1/2 cup of cooking oil.

9

Add chopped onions in large ring shapes and sauté until slightly translucent.

10

Add tomatoes and sauté together for about 2 minutes.

11

Add half of the dried meat followed by spices including tomato paste, curry powder, black and white pepper, and cumin powder.

12

Add beef bouillon cubes and mix well.

13

Add the remaining half of the dried meat and stir gently to avoid sticking.
