Boil the eggs by simmering them gently for 7 minutes.

Remove the eggs and crack the shells all over.

Place the eggs in an ice bath.

Once cooled, peel the eggshells off easily.

Gently scoop out the egg yolks and place them in a bowl, reserving the egg whites.

Add 1/3 cup of good quality mayonnaise, 1 tablespoon of Dijon mustard, and a good amount of Tabasco sauce to the yolks.

Blitz the mixture to a smooth paste.

Scoop the yolk mixture into a piping bag.

Pipe the yolk mixture back into the egg whites, being as fancy as you dare.

Sprinkle with chives and dust with smoky paprika before serving.
