Hard boil 8 large eggs and place them in cold water before peeling.

Peel the eggs and slice them in half lengthwise.

Pop the yolks out into a container and mix until they are broken down to a rice size consistency.

Add 1/4 cup mayonnaise, 1 teaspoon white wine vinegar, a pinch of salt, and a couple of pinches of black pepper to the yolks and mix until combined.

Fold in about 2 heaping tablespoons of chopped chives into the yolk mixture until well mixed.

Spoon the yolk mixture back into the egg white halves, filling them evenly.

Prepare the smoker and turn on the smoke generator with 3 pucks for 1 hour.

Place 6 filled egg halves in the smoker and smoke for 20 minutes, and keep 4 halves out of the smoker for a non-smoked comparison.

After 20 minutes, remove the first batch from the smoker and taste them, then smoke the remaining 6 halves for an additional 20 minutes for a total of 40 minutes.
