1

Add sausage meat to a bowl.

2

Add cayenne, garlic, thyme, and shallots to the sausage meat.

3

Mix everything thoroughly using a spoon or your hands for a couple of minutes.

4

Boil water in a pot and add a dash of vinegar.

5

Gently lower room temperature eggs into boiling water and set a timer for 5 minutes.

6

Once the timer goes off, lift the eggs out and place them into freezing cold water to stop cooking.

7

Prepare a chopping board with a layer of cling film.

8

Take a portion of sausage meat (golf ball size) and place it on the cling film.

9

Cover the sausage meat with another layer of cling film and flatten it into a disc about 1 cm thick.

10

Remove the top layer of cling film and place a boiled egg in the center of the disc.

11

Carefully wrap the sausage meat around the egg using the cling film to help shape it.

12

Ensure the egg is completely covered with the sausage mixture.

13

Prepare for coating by making a well in the flour and placing the egg inside to coat it.

14

Shake off excess flour and dip the egg into an egg wash, turning to coat well.

15

Return the egg to the flour for a second coating, shaking off excess again.

16

Dip the egg back into the egg wash for another coating.

17

Place the egg into breadcrumbs, ensuring it is well covered and firm to the touch.

18

Heat oil to 180°C (about 356°F) in a deep fryer or large pot.

19

Fry the scotch egg for about 4-5 minutes until golden brown.

20

Remove the scotch egg from the oil and drain on paper towels before serving.
