Ginger and garlic paste 2 tbsp

2 to 3 tbsp mandi spice mix
Red colour 1/4 tsp
Lemon juice 2 tbsp
Finely chopped coriander leaves
Thenga Parai fish 1 to 1 1/2 kg
Ghee 2 tbsp
Fish oil 2 tbsp
Bay leaf
Cloves
Cardamom
Cinnamon
Black cardamom
Star anise
Onion 2 medium slice
Chopped 2 green chilies
Dried lemon 1
Mandi spice mix 1 tsp
Basmati rice 3 cups

Prepare the mandi spice mix by combining coriander seeds, cumin seeds, cardamoms, cloves, black pepper corn, mace, saffron, and turmeric powder.

Roast the almonds and cashews in ghee until golden brown.

Marinate the Thenga Parai fish with ginger and garlic paste, salt, mandi spice mix, red colour (if using), lemon juice, and finely chopped coriander leaves.

In a pot, heat ghee and fish oil, then add bay leaf, cloves, cardamom, cinnamon, black cardamom, star anise, sliced onions, and chopped green chilies.

Add the basmati rice and stir, then add water according to rice package instructions and cook until rice is done.

Once the rice is cooked, give it a charcoal smoke for a smoky flavor before serving.
